*Meal 2* Card Night with my Parents
Card night is so much fun at our house. We have faithfully set aside Tuesday night of each week to play cards with my mom and dad. I get excited to make a fun meal that we can share together before we start our game.
But with my dad struggling with his new medicine to regulate his blood sugar, I have begun worrying over sugar,salt,gravy,cheese….
I will admit I do not have the diabetic meal plan all figured out but I am making an effort for a week.

- 1 1/2 Pound Pork Tenderloin
- 1 Cup Water
- Cooked on Low ALL Day
- 1 Package White Whole Mushrooms
- 4 Cloves Garlic
- 1/2 Red Onion
- 2 Nice Splashes of Olive Oil
- Balsamic Vinegar
- Cracked Black Pepper
Oh my! When I walked in after work, the tenderloin smelled beautiful. It was so tender.
I took the juice from the meat out and put it in my skillet. Along with olive oil, I added garlic, red onion, and pepper. I have a Ninja, but I hand diced the garlic and onion so I would have a bit larger pieces to show up in each forkful. This mixture cooked nicely for about 3 to 4 minutes. I then sliced and diced the mushrooms. I know I can buy them sliced, but I love to see them whole and I always sample a few pieces before they go in the skillet!
After they were added, I turned my stove down to medium low and let them simmer for about 3 minutes. (Then I sprinkled about 2 tablespoons of the Balsamic Vinegar over the top.) Continually stirring because I love to see them cooking and the smell drifts up to make me smile 🙂
I removed the skillet from the heat and began shredding my tenderloin. Then I poured them straight from the skillet in to the crockpot and mixed it together well. Served with a salad from a head of lettuce that I chopped nice bite-size hunks,whole tomatoes diced,the other half of the red onion, cauliflower, broccoli,and sunflower seeds. What a simple meal to make and I heard a lot of happy yum’s while we ate!
