Welcome Home. You had a long day. You’re hungry! You walk in and remember you took Homemade Pumpkin Soup out of the freezer to warm up for dinner. Now you just need some bread or muffins. Crisp Fall Evenings, leaves drifting down from the trees, and a hot bowl of comfort soup!
1 Large Egg
1 1/3 Cups Milk or 1 3/4 Cups Buttermilk
1/4 Cup Crisco Pure Vegetable Oil
2 Cups Martha White Plain Enriched White Corn Meal
1 Tablespoon Baking Powder
1 Teaspoon Salt
1/2 Pound Sausage of your choice, cook and drain
Heat oven to 450 degrees. Spray your muffin pan or line with muffin cups.
Beat egg in medium bowl. Stir in milk, oil, corn meal, baking powder and salt until smooth. Batter should be creamy and pourable. If too thick, add 1 to 2 Tablespoons more milk. Stir in your cooked, drained sausage. Pour in to your muffin pan and top with your choice of shredded cheese!
Bake 20 to 25 minutes
Pumpkin Soup-You can decide if you want to bake a pumpkin in the oven, which is so rewarding to serve homemade from scratch soup to your family. You can bake, boil, and/or microwave pumpkins and scrap the pulp out, puree in a blender, and freeze for soup or to bake with.
6 Cups Chicken Broth
1 1/2 Teaspoons Salt
4 Cups Pumpkin Puree
1 Teaspoon Chopped Fresh Parsley
1 Cup Chopped Onion
1/2 Teaspoon Chopped Fresh Thyme
1 Clove Garlic, Minced
1/2 Cup Heavy Whipping Cream (or less)
5 Whole Black Peppercorns or a dash of pepper 🙂
Heat Stock, Salt, Pumpkin Puree, Onion, Thyme, and Garlic and bring to a Boil. Reduce heat and Simmer for 30 minutes, Uncovered.
If you are using Fresh Pumpkin, Puree your soup in small batches in a food processor. Be careful, as of course, it is hot. A hand blender is best to use, as with blenders, the lid may come off and splatter you with hot soup.
*I did not Puree this recipe and I added less Chicken Stock to show off the flavor and texture of the Pumpkin.*
Return to pan and bring to a boil, then simmer uncovered for another 30 minutes. Add your Heavy Whipping Cream (Optional) and Parsley (Optional)
